The Matador score was composed and orchestrated by John Califra. The music was recorded in Bulgaria by the Sofia Metropolitan Orchestra under the direction of Christo Pavlov. It features solo trumpet work by American Don Harris. The music was mixed and edited by John Califra and Mark Wissing.

The score employs two instrumental groups; a 64 piece symphony to underscore the spectacle and intensity of the corrida and a 13 piece ensemble to express the more intimate scenes of the film. While the music has a clear Spanish influence, its Spanish character has less to do with its substance than its emotional content, which ranges from pathos to passion.
